Zucchini Noodle Filipino Spaghetti
Filipino Spaghetti with Zuchinni Noodles
Serves 1-2
Ingredients:
2 spiralized zucchini
2 beyond meat sausages or plant based hot dogs, sliced in rounds
1 cup spinach
Neutral oil
2 cloves garlic, minced
1 cup banana ketchup
2 cups tomato sauce
4 tablespoons sugar( or to taste)
¼ teaspoon salt
Dash black pepper
Vegan Parmesan
Directions:
Spiralize zucchini and set aside
Cook and slice vegan sausage or hot dogs and set aside
Make spaghetti sauce by sautéing garlic in a pot on medium heat until softened, then adding the banana ketchup, tomato sauce, sugar, salt and pepper. Stir to combine.
Let sauce reach a boil, then turn down the heat to simmer sauce for 10 minutes.
Add zuchinni noodles, spinach, and vegan sausage or hot dogs
Plate and add vegan parmesean
A vegetable that I consider the most versatile is zucchini. I learned how to utilize it in different recipes when I worked at the Stockpot after returning to Virginia. They have an amazing zucchini noodle salad and I would make double chocolate zucchini bread. I later learned how to use zucchini as a neutral thickener in sauces like curry.
My time at the Stockpot was a huge stepping stone in my culinary career. It was the first woman led kitchen I worked at by Anne and later, Michelle. I gained so much wisdom from everyone I was blessed to work with. From Patrick’s front of the house knowledge and from Anne and Michelle’s leadership, it was truly a diverse kitchen. I was taught how to read, call out, and expedite tickets, beautifully plate dishes close to fine dining standards, and rock it out on Ramen nights with Gabby. Ariel, whom I’ve known since high school, taught me how to work the line. I was graced with the spirit of southern hospitality by DeeDee, divulged in the beautiful baked goods by Becca, had awesome chemistry on the line with Areej, Amber, Heather, Kayla, and Becca P. Amber K, Lauren, Jennifer, Zee, and Hayley had our backs as the front of House Staff Members. We even went on a camping trip near the Luray Caverns together and had an awesome time. I will never forget the fun I had and will treasure the memories there.
One day I had decided to combine the flavors of Filipino Spaghetti and marry them with the zucchini noodles I grew to love from the Stockpot. It made for a beautiful creation. I hope you enjoy this recipe as much as I did!
